The Taggiasca pitted olives Roi are chosen, put in brine and pitted, then they are vacuum-packed. Taggiasca is a little olive that contains a high percentage of oil. It is really tasty, bitter and salty. The salt solution gives to the olive better texture, fragrance and fleshiness.
